Ingredients
- 4 cups seedless watermelon, cubed and chilled
- 12 fresh mint leaves, plus extra sprigs for garnish
- 2 tablespoons fresh lime juice
- 1-2 tablespoons honey or agave syrup, to taste (optional)
- 1 cup cold sparkling water or still water
- Ice cubes, for serving
- Lime wheels, for garnish (optional)

Chill two tall glasses in the freezer or refrigerator while you prepare the cooler.

Add the diced watermelon, mint leaves, lime juice, and honey (if using) to a blender and blend on high until completely smooth, about 30 seconds.

For a silkier texture, pour through a fine-mesh sieve, pressing gently, and discard the pulp (optional).
