- 1.5 lbs (700g) boneless, skinless chicken thighs
- 1 tablespoon neutral cooking oil
- 1 stalk green onion
- 1 tablespoon toasted sesame seeds
- ¼ cup soy sauce
- 2 tablespoons brown sugar
- 1 to 2 tablespoons mirin
- 1 tablespoon toasted sesame oil
- 3–4 cloves garlic
- 1 teaspoon fresh ginger
- ½ small onion
- 1 to 2 teaspoons gochugaru
- A pinch of black pepper

Mix the Marinade: In a large bowl or a zip-top bag, combine the soy sauce, brown sugar, mirin, sesame oil, minced garlic, grated ginger, diced onion, and red pepper flakes. Whisk well until the sugar dissolves.

Marinate the Chicken: Add the sliced chicken to the bowl or bag, making sure every piece is well-coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).
