Fluffy Banana Pancakes (Ready in 15 Minutes)

These cloud-soft banana pancakes are naturally sweetened by ripe fruit and come together in a single bowl in just 15 minutes. Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder (aluminum-free)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup mashed overripe banana (about 1 1/2 large)
  • 1 large egg
  • 3/4 cup milk (any kind)
  • Cooking spray, for the pan
  • Sliced banana and maple syrup, for serving

Instructions

    In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.

    In a separate larger bowl, beat the mashed banana and egg until blended. Whisk in the milk, then stir in the dry ingredients until just combined (the batter will be slightly lumpy).

    Heat a large nonstick pan over medium heat and spray with cooking spray.

    Using a 1/3-cup measure, pour 3-4 circles of batter into the pan. Cook until the pancakes puff on top and turn golden underneath, 2-3 minutes, then flip and cook 1-2 minutes more until risen and cooked through. Makes 8 pancakes.
