20-Minute Honey Garlic Chicken Stir Fry

Ingredients

  • 1 lb chicken breast or thighs, cut into bite-size pieces
  • 3-4 cups mixed vegetables (bell pepper, broccoli, snap peas, carrots, or zucchini)
  • 2 tablespoons oil (avocado or canola)
  • 3-4 garlic cloves, minced
  • 1 teaspoon fresh grated ginger
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon rice vinegar or lemon juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Salt and pepper, to taste
  • Sesame seeds and green onion, for garnish

Instructions

    In a small bowl, stir together the honey, soy sauce, and vinegar (or lemon juice). Set aside.

    Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add the chicken, season with salt and pepper, and cook 4-6 minutes until browned and cooked through. Transfer to a plate.

    Add the remaining oil to the skillet. Toss in the vegetables and cook 3-4 minutes until crisp-tender.

    Add the garlic and ginger and stir for about 30 seconds so they don't burn.

    Return the chicken to the pan, pour in the sauce, and stir. Stir in the cornstarch slurry and cook 1-2 minutes until the sauce turns glossy and lightly thickens.
